Archer–Earlier on, use whatever you can pick up off the ground. Here you can buy professional Knight powerleveling. As soon as you can, either buy a composite bow (42 AP) or wait and buy a Horn Crossbow (74 AP). Get an upgrade Horn Crossbow later and upgrade it with either an Elemental Scroll or just upgrade it with Upgrade Scrolls. Much later in the game you will want to focus on buying Iron Bows or Iron.

Assassin–Earlier on, buy the cheapest shield and use it with the dagger that you can get off the New Warrior's Mission quest(knight online gold). Then, buy a pair of Assassin Daggers. Or, buy a pair of upgrade Assassin Daggers and try putting elemental on them. Much later in the game aim for Shards or Kukry daggers.
